
I came upon a beautiful display of pineapples strolling through the produce section of the grocery store. Not really sure what I would do with a whole pineapple, I decided to go ahead and pick one up.

Making the Pineapple cake
Seeing the pineapple sitting on the kitchen counter it came to me that I wanted to make a pineapple cake. Not only a cake that had the wonderful favor of the fruit , but the shape and look of a real pineapple.
To start, I made my Devine Vanilla Rum Cake in 5×3 round cake pans.

Not wanting to waste the cake batter, the amount in each cake pan was generous which resulted in the cake mushrooming over the top of the pan.
No worries though, using a serrated knife a clean and even cut was made making the top of the cake nice and flat. John ( my husband) enjoyed the cut off pieces.

The cake layers were stacked with buttercream frosting . In between the layers crushed fresh pineapple was placed.

The cake was then crumb coated and refrigerated for 30 minutes to set the cake crumbs. The cake was slightly sculpted forming the shape of a pineapple.

Fondant was colored to a yellow gold and rolled out. Using a small square cookie cutter many squares were cut out for the skin of the pineapple.

The cake was frosted with pineapple buttercream frosting. Using a knife, a template for placing the fondant squares was drawn onto the cake.

The small fondant squares were placed on the cake.Using a fondant shaping tool, markings were made around the edges of each square.

Using small scissors the center of each puffed fondant square was snipped.

Green for coloring was added to the pineapple cake in between each puffed fondant piece. Additional food coloring ( brown) was used to give the pineapple cake a realistic appearance.

The crown was cut off the real fruit pineapple that I had purchased and was placed onto of the pineapple cake. Wa La !! here we have a beautiful pineapple cake.
Is it real or is it Memorex?? Oh, maybe I am aging myself …lol

Oh what a wonderful cake!!!! There is a light taste of rum in the soft crumb cake that pairs wonderful with a pineapple butter cream frosting. The chunks of pineapple add a great tropical taste with each bite.

I hope you try this fun cake. It has a way of adding coolness to the hot summer.
Your friends and family will not believe that it is a cake. They will think for sure that it is the fruit.
