One would not think of Key Lime Pie with St Patty’s Day, but this is not a typical Key lime pie either.
Difference Between Lime Pie and Key Lime Pie
Most Key Lime pies are made with Condensed Sweetened Milk and fresh Key limes.
The original key lime pies back in the early 1800’s were referred to as Lime Pies. They did not contain condensed milk since condensed milk was not invented until 1853 and the limes used at that time were not named for the region where grown.

Undoubtably you have heard, ” Kiss me, I’m Irish”. It is thought that kissing someone who is Irish is the next best thing to kissing the Blarney Castle stone. According to legend, kissing the stone will give you the power of eloquent, persuasive speech and possibly luck.

Key Lime Pie with Homemade Whipped Cream Topping
Ingredients
Graham Cracker Crust:
- 2 cups Graham crackers
- 1 stick melted unsalted butter
- 1/4 cup brown sugar
- 1 pinch salt
Key Lime:
- 3 eggs- room temperature
- 1/2 cup fresh squeezed lime juice from limes( about 7-8)
- 1 cup sugar
- 3 Tablespoons hot water
- 1/2 teaspoon salt
Whipped Cream:
- 2 cups heavy whipping cream
- 1/4 cup powdered sugar
- 2 teaspoons vanilla
Garnish:
- lime slicings. Pictured are shamrock cookies.
Instructions
Graham Cracker Crust:
- Preheat oven to 350 degrees
- In your food processor place the graham crackers, butter, sugar and salt. Pulse until the mixture is fine.
- Dump the contents from the food prcessor into a 9 inch pie plate. Firmly press the graham crackers on the bottom of pie plate and the sides. Use a measuring cup, or something else with a flat botton the press the graham crackers firmly to the pie plate
- Bake the crust for 8 minutes or until the edges start to brown.Set the crust aside
Key Lime Filling:
- Separate the 3 egg yolks and whites.
- Squeeze the juice from 7 to 8 Limes to obtain 1/2 cup. Helpful hint: roll the limes back and forth on the counter. Place 2 whole limes at a time in the microwave for 30 seconds. Slice the limes in half and squeeze to juice. The warmth helps provide more juice and makes the limes softer and easier to squeeze.
- Place the egg yolks into a glass heat proof mixing bowl and whisk. Add the lime juice, salt, water, and 1/2 cup of sugar. Whisk.This is where I added some green food coloring for St Patty's day, but no food coloring is need for a traditional Key lime pie.Place the glass mixing bowl over a pot of simmering water ( double boiling) and cook the egg yolk mixture until it starts to thicken. Whisking frequently. The cook time will be about 20- 25 minutes. The thickening will be slight.Remove the glass mixing bowl from the pot. Place on a kitchen towel on the counter.
- In a stand mixer or hand held electric mixer whip the egg whites until stiff.When stiff, add the remaining 1/2 cup of sugar to the egg whites one tablespoon at a time.
- Scoop up about 1 cup of the egg whites and quickly stir it into the egg yolk mixture.
- With the remaining 2/3s of the the egg whites, fold them into the mixture.
- Pour the fluffy mixture into the graham cracker crust and bake at 350 until the top slightly browns…about 20 minutes.
- Allow to cool and then refrigerate the pie.
Whipped Cream Topping:
- Add all ingredients to a stand mixer and whip until soft peaks form.You can tranfer the whipping cream to a piping bag to apply dollops if desired
