OMG!!!! Chocolate meets cherries in a cookie. How fabulous is that?
The grocery store had to most beautiful display of cherries in the produce selection. I just had to pick up some up.
Immediately, I knew what I wanted to do with the cherries. I had already made plans to make my “Super-Duper Chocolate Chip Cookies…Like No Other”, so why not develop a spin off recipe using cherries??
There are probably hundreds of Chocolate chip cookie recipes on the internet and within cookbooks. Each recipe has the main core ingredients and there is a just a little twist or turn that separates one recipe from another. Besides the ingredients, the method of preparing the dough can vary from one recipe to another. These Chocolate chip cookies are different from the usual butter cream dough. The cookie dough has ground oatmeal which changes the texture and structure of the cookie allowing for big chucks of chocolate. Additionally, fresh Cherries were added to take these cookies over the top !
How to Make Oatmeal Chocolate Chip Cherry Pecan Cookies
The soften butter is creamed with both the brown and white sugar
Five cups of Oatmeal is grinded in a food processor. This is the secret to the great texture of the cookies.
Eggs and vanilla are added to the creamed butter
All of the dry ingredients are added to the creamed butter
All the fixings ( Chocolate chips, chocolate chunks, and pecans )are stirred in by hand. The cherries added last.
