
OH this is YUMMY !!!!! Banana bread plays well with blueberries giving you a wonderful morning sweet bread to enjoy with a cup of coffee.
I had a bunch of bananas that were starting to get pretty ripe. I decided to eat one, freeze several and to make banana bread. I also had some fresh blueberries, so I though why not….bananas and blueberries should play well together.
Need something fabulous to bring to work for potluck? Why bring a lunch item when you can surprise your coworkers with a wonderful banana and blueberry bread to enjoy with their morning coffee. This yummy bread comes together quickly.

Banana Blueberry Bread
Ingredients
- 3 cups flour
- 1 tsp baking powder
- 2 tsp baking soda
- 2 tsp salt
- 1 tsp cinnamon
- 1 tsp nutmeg
- 2 cups sugar
- 1 cup vegetable oil
- 4 eggs beaten
- 2 tsp vanilla extract
- 4 ripe bananas
- 2 cups blueberries
Instructions
- Preheat oven to 350 degrees. Prepare 2 loaf pans ( 9×5)- spray with Pam
- In a mixing bowl blend flor, baking powder, baking soda, salt, cinnamon and nutmeg.
- In another bowl, beat the eggs and then add sugar oil, and vanilla. Blend the ingredients until well mixed. Stir in the mashed bananas and the blueberries.Add in the dry ingredients and stir intil incorporated.
- Divide the batter between the two prepared pans. Bake for 50-60 minutes. Test bread with a toothpick. Bake bread until the toothtepick when inserted in the center of the bread comes out clean. Cool bread from 30 minutes before removing from teh pan. Continue with cooling on a wire rack. Serve when completely cooled…a few hours

How to Freeze Banana Blueberry Bread
Thankfully, banana breads freeze very well. After the loaf has completely cooled ( a few hours) wrap the bread in parchment paper and then place the loaf in a Z-lock bag. Label the bag and date it.
