
Today is the first day of Fall and the temperatures are starting to drop( in some states). The temperature is currently 70 here in Texas, but that is probably thanks to the tropical storm. I know, next week it will be back up into the 90’s, but for now I am going to enjoy every minute of the cooler temperature and wonderful breeze. It is a nice break from the heat and a timely reminder of temperatures soon to come our way.
With the dark skies and occasional claps of lightening that are occurring, a slice of warm fruit bread with a cup of coffee sounds good. I think making this apple, raisin, pecan bread is the perfect bread to fit the bill.

Apple, Raisin, Pecan Bread
Ingredients
- 2 beaten eggs
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/4 cup vegetable oil
- 1/4 cup vanilla yogurt
- 1 tsp vanilla extract
- 1 cup applesauce
- 2 cups flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/8 tsp nutmeg
- 1 pinch ginger- small pinch
- 1 cup diced apples
- 1/2 cup raisins
- 1/2 cup chopped pecans
Instructions
- Preheat oven to 350 degrees. Prepare a loaf pan by lining it with parchment paper
- In a large bowl beat 2 eggs with a hand whisk. Add in both white and brown sugar. Whisk well. Add oil, yogurt, vanilla extract and applesauce. Mix well.
- Add flour,baking powder, baking soda,salt,cinnamon,nutmeg, and the pinch of ginger to applesauce mixture. Fold in diced apples and chopped pecans
- Pour batter into loaf pan. Bake for 50 minutes or until tooth pick tester comes out clean
- Cool in pan for about 15-20 before transgerring to cooling rack.
